Peaches N Cream Salad

It’s peach season! Summers not over yet, and it’s the perfect time to indulge in some sweet and juicy peaches from your local farmers market. This peach salad is the perfect way to beat the summer heat. It combines a refreshing combination of peaches and blueberries with the nuttiness of toasted pecans and topped off with creamy goat cheese crumbles. It is the perfect balance of sweet and sour, and will have your taste buds exploding.
Ingredients:
4 Peaches (Ripe but firm)
2 Tbsp Olive Oil
5 Oz Baby Arugula
1/2 Cup Blueberries
1/2 Cup Crumbled Goat Cheese
Dressing:
2 Tbsp Honey
2 Tbsp Plain Greek Yogurt
1 Tbsp Extra Virgin Olive Oil
1 Tbsp Apple Cider Vinegar
Directions:
- Remove the skins of the peaches and cut them into 1 inch wedges. Toss the peach wedges into oil and then grill them on the barbecue or griddle until you see grill marks on both sides. This step will enhance the flavor of your peaches.
- Place a bed of baby arugula or greens of your choice onto a large platter.
- Disperse the blueberries throughout and carefully arrange the peaches. To avoid wilting, wait for the peaches to cool to room temperature before assembling the salad.
- Sprinkle clusters of goat cheese over the top.
- To make the dressing, combine honey and Greek yogurt into a bowl. Then add a splash of apple cider vinegar for a hint of acidity. Slowly drizzle in oil until the desired consistency is reached.
- Pour the dressing over the salad just before serving.
