Ingredients

  • 2 1/2 Cups All Purpose Flour

  • 1/2 Tsp. Salt

  • 3/4 Cup (1 1/2 Sticks) Unsalted Butter (Room Temperature)

  • 1 Cup Sugar

  • 1 Egg

  • 1 1/2 Tsp. Vanilla Extract

  • Green Food Coloring (optional)

Directions

  • Sift together flour and salt over a small bowl, and set aside.
  • In the bowl of an electric beater, beat the butter on high until creamy (about 2 minutes).
  • Reduce the speed to medium and slowly add the sugar. Beat for an additional 2 minutes or so, until light and fluffy, occasionally stopping to scrape down the sides of the bowl with a spatula.
  • Add the egg and the vanilla and continue to beat for another minute.
  • Add green food color to this mixture until desired color is achieved.
  • Stop the mixer and add half the flour mixture. Beat on low speed until most of the flour has been absorbed. Add the remaining flour and continue beating until all of the flour has been absorbed and the dough starts to pull away from the sides.
  • Divide the dough in 2 equal parts and shape into disks. Wrap each disk in plastic wrap and refrigerate for at least 2 hours.
  • Remove the dough from the refrigerator and let it stand for 5 minutes or so.
  • Preheat the oven to 350°F (180°C).
  • Roll the dough out on a lightly floured surface 1/4 inch thick. Using Frankenstein cookie-cutter, cut out shapes. Transfer the cookies to the prepared baking sheets, placing them 1 inch apart.
  • Bake the cookies until golden brown around the edges, 10 to 15 minutes.
  • Transfer the cookies to wire racks and let cool completely. Decorate as desired.

Notes

  • See my Royal Icing recipe for the icing recipe that I used to decorate my Frankenstein cookies. You will need black, green and grey food color. I recommend sticking the Edible Candy Eyes to the cookie first with green royal icing. Then I piped a long, exaggerated nose with the same bright green icing, adding nostrils to either side. The bolts were outlined and filled with grey royal icing, and the eyebrows, mouths and hair were piped with black royal icing.
