Eggs Benny Breakfast Bagel
Saturday morning in our house began with breakfast for two, as the kids had a sleepover with their Auntie Amanda the night before. Jeff and I were enjoying a rare moment just the two of us, and decided to indulge in a gourmet Eggs Benny Breakfast Bagel to charge us up for the day ahead. Fun fact, Jeff is not much of a breakfast guy and almost always forgoes eggs for a double side of home fries whenever we go out for breakfast. That being said, he could not pass up on this stack of delicious ewwy, gooey goodness, and I have managed to convince him, at least for the time being, that eggs are not all that bad.
I for one, am not a fan of English muffins and I was looking for a tasty alternative. That’s when I discovered the Everything Bagel was the perfect replacement. The hole in the middle acts as the quintessential spot for the egg to nestle as it poaches in the oven. The chewy bagel offers the perfect sponge to soak up the Hollandaise.
What makes this Eggs Benny so unique is the combination of an Everything Bagel, topped with a perfectly poached egg, sprinkled with cheddar cheese and smothered with garlic butter Hollandaise sauce. I leveled up my bacon too with my Brown Sugar Bacon recipe. Feel free to substitute the bacon with ham, smoked salmon, spinach, or avocado. I recommend switching up the bagel for other alternatives such a Sundried Tomato, Four Cheese, Sesame Seed, Jalapeno Asiago etc.
Well, Breakfast really is the most important meal of the day. Eggs Benny Breakfast Bagel

1 Everything Bagel
1 pkg McCormick Gourmet Hollandaise Mix
1/2 Cup Garlic Butter
1 Cup Water
2 Eggs
1/2 Cup Shredded Cheddar Cheese
Bacon
Chives (Optional)
Directions
- Prepare Brown Sugar Bacon according to recipe, and place in groups of two onto a parchment lined baking sheet.
- To make Hallandaise, melt 1/2 cup of garlic butter in a medium saucepan. Remove from heat and stir in 1 cup of cold water and sauce mix. Bring to a boil over medium heat, stirring constantly until it thickens. Reduce heat, and let it simmer for 3 minutes. Set aside.
- Slice the bagel in half and place each half over two strips of bacon.
- Crack two eggs, and pour them into the center of each bagel. Top with shredded cheddar cheese and bake in the oven at 400° F for 12 to 15 minutes until desired consistency, or until it no longer jiggles when the tray is shaken.
- Remove from oven and pour Garlic Butter Hollandaise over the top. Garnish with chive (option), and serve.
