Thyme Baked Goat Cheese Rolls

Ingredients
1 Large Roll Rectangular Filo Sheets
8 Sprigs Fresh Thyme
4 Tbsp. Butter
5 Oz. Goat Cheese
6 Tbsp. Honey
Directions
- Preheat the oven to 350°F
- Cut the Filo Sheets into 4 equal sized rectangles by cutting the sheets in half lengthwise and horizontally. Keep the Filo Sheets covered with damp paper towel when not being used to prevent them from drying out during assembly.
- Generously, brush the rectangles with butter. Save about 1 tbsp. to brush on the tops.
- Sprinkle Thyme leaves along the length of each rectangle. Fold the Filo rectangles in half lengthwise to enclose the Thyme leaves, then spread goat cheese crumbles along the horizontal side.
- Begin rolling the pastry, starting at the goat cheese end. Continue rolling until you get to the joint. Place on a baking tray lined with parchment paper.
- Brush with remaining butter, and bake until golden brown (about 20 minutes).
- Arrange on a platter garnished with Thyme. Serve warm with lavender honey drizzled on top.
Notes
- For a special treat, I recommend using Lavender Honey to drizzle over the top.
